heaven must be missing angels


while i feel super blessed to have a job i love.
that i get excited to go to work every day.
it has been so intense and crazy these last 2 weeks.
and all i want is to be on this comfy thing.
by the ocean/lake.
with a book (times 2).
a margarita (times 4 or 5).
and fun people.

greeking out

tonight's dinner was FANTASTIC!
i'm excited for my leftovers for lunch.

*baked shrimp with feta*
  • 1 tablespoon fresh lemon juice
  • 1 1/2 pounds large shrimp, peeled and deveined
  • Cooking spray
  • 1 teaspoon olive oil
  • 1/2 cup prechopped onion
  • 1 garlic clove, minced
  • 2 tablespoons bottled clam juice
  • 1 tablespoon white wine
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon freshly ground black pepper
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1/2 cup (2 ounces) crumbled feta cheese
  • 2 tablespoons chopped fresh flat-leaf parsley

    Preparation

    1. Preheat oven to 450°.

    2. Combine lemon juice and shrimp in a large bowl; toss well. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add oil to pan, swirling to coat. Add onion to pan; sauté 1 minute. Add garlic; sauté 1 minute. Add clam juice, wine, oregano, pepper, and tomatoes; bring to a boil. Reduce heat, and simmer 5 minutes. Stir in shrimp mixture. Place mixture in an 11 x 7–inch baking dish coated with cooking spray. Sprinkle cheese evenly over mixture. Bake at 450° for 12 minutes or until shrimp are done and cheese melts. Sprinkle with parsley; serve immediately.

zucchini bikini diet

i made this recipe last sunday. normally, i would post the picture on the website where i found it, but the picture doesn't do this justice. plus, mine looked tons better than the picture. anyways, this is a simple, light meal that is great for summer! found here!

seafood stuffed zucchini
  • 4 zucchini, halved lengthwise
  • 1 egg, beaten
  • 1/2 pound cooked crabmeat, diced
  • 1/2 pound cooked salad shrimp
  • 2 teaspoons finely chopped garlic
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh lemon juice
  • 1 cup Italian seasoned bread crumbs
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon ground black pepper
  • 1 cup shredded Monterey Jack cheese

    directions

  • Preheat oven to 350 degrees F (175 degrees C).
  • With a large spoon, scoop out the centers of each zucchini half, reserving the meat.
  • In a large bowl, mix about 1/2 the reserved zucchini meat, the egg, crabmeat, shrimp, and garlic. Blend lime juice and lemon juice into the mixture, and stir in the Italian seasoned bread crumbs. Season with oregano, basil, and pepper.
  • Arrange the zucchini halves in a medium baking dish. Generously stuff the halves with the crabmeat and shrimp mixture.
  • Bake 35 to 45 minutes in the preheated oven, until golden brown. Remove from heat, cool slightly, and top with cheese. Return to the oven, and broil 5 minutes, or until the cheese is melted.

with spongebob


yes this is an image of a pregnant woman with spongebob painted on the belly.
and there are two reasons this made me laugh:
1) the caption from jezebel: I know I want my child to be
the infant version of a sponge on quaaludes.
2) this is something i would do because i thought it would be hilarious and my great friend would hang her head in shame that she knew me and say, "my god, jenny..."

talk derby to me.


this year, i brought the kentucky derby to indianapolis.
i had a little gathering of my nearest and dearest that live here
and we celebrated this kentucky tradition.

for the big day i cooked like a kentucky girl.
meaning i used 3 sticks of butter.
i kid you not...

first on the list was kentucky hot browns!

but delicious!

second, i made grits casserole!
i personally love grits but know tons of people don't.
however, this casserole got eaten up!
